Potatoes buckwheat pancake with Pork Paté Hénaff

Savoury and nourishing, the potatoes buckwheat pancake are perfect for a brunch or buffet.

The ingredients potatoes buckwheat pancake

  • 1 can of Pork Pâté Hénaff 156g
  • 500g potatoes
  • 2 yolks
  • 50g butter + 50g butter for the pancakes cooking
  • A little bit of flour
  • Salt, pepper
  • Green salad and vinaigrette
  • 10 cl cider
  • 10 cl cider vinegar
  • 15 g sugar

Steps in the potatoes buckwheat pancake recipe

Preparation of the reduced cider vinegar

Pour the cider vinegar, the cider and the sugar in a small pan. Gently cook in order to reduce the preparation and get a syrup liquid. To let it cool down.  

Preparation of the « duchesse potato »

Peel the potatoes and cook them in a slightly salted water. Drain them once cooked and dry them gently in a pan. To mash the potatoes pulp, mix the softed butter and add the yolks one by one.

Pancakes preparation

Open the pork pâté can and slice the pâté in 4 rounded slices. To cover each slice with a layer of duchesse potatoes and slightly flour the pancakes. To color each side of the pancakes with butter in a frying pan.

Setting of the potatoes buckwheat pancake

Serve the pancakes with green salad. To circle the pancake with a stroke of reduced cider vinegar.
